Missy Nelson is a ten year seasoned professional within the food industry. She joined the Taco Bell family to create innovative menu items that offer balanced options with the Taco Bell flavors people love. As Taco Bell’s registered dietitian and one of its menu developer, she spends her days with a hard-working team of chefs, food scientists and other culinary experts to enhance the menu and perfect our core ingredients. As someone who believes in nutrition, ingredient integrity and great flavors, she champions for nutrition to be more accessible and convenient, while also staying in tune with what food trends our consumers are buying into. Missy and our food experts are constantly listening to what’s important to consumers – from everything to vegetarian and made-without-gluten options to a calorie counter and cleaner ingredients – in order to deliver an experience that feeds their lives with más.

She earned her Bachelors of Science in Food Science, Nutrition and Dietetics from San Diego State University, and is certified on Mediterranean cuisine from the Culinary Institute of America. With the American Red Cross Women, Infants & Children, she developed a cooking program called Cooking Live!, teaching women and children essential culinary nutrition skills, and published a cookbook called WIC Tested, Dietitian Approved.

A food ninja by day, she brings it home where she loves to cook with fresh produce from her garden and pull inspiration for new menu items. On her days off she likes to spend time with family, squeeze in time for gardening and occasionally ride her mountain bike or skydive. You could say she likes to Live Más.

She takes great pride and responsibility in her role as Taco Bell’s dietitian – proud of what we have accomplished, excited for what is to come, and ready to bring you along on our nutrition journey.
